Short comment by our Masterbrewer:
"This is probably the most eclectic beer project ever done. Since 2019 we are ageing in oak barrels 12 different wild/sour ales. Basically, these beers do a first fermentation in inox tanks, then we put them in barriques used for wine etc. and so we add wild yeasts and bacterias, and fruits, to start a new fermentation inside of the barrels. This working even with the right humidity level and the years of experimentation, to create the best conditions for the nature to work inside the oak. Nature that needs many attentions and cares, and especially lot of patience.
These beers are the fruit of much passion, much experimentation beyond the years, many efforts and many investiments even through a pandemic situation, was too boring and awful to stop to create artistic Beers, so our "Wild Adventures Series" was increased a lot.

2 x "There's Beauty In Tragedy" (saison base in Chardonnay with wild strawberry. wild yeasts inside)
